The company Zero is changing the narrative by creating cooking oil through the fermentation of microbes instead of extracting oil from crops. This innovative method could pave the way for future advancements in food production.
Traditional vegetable oils are derived from pressing the seeds or fruits of plants. In contrast, refined oils, such as those produced by Zero, are created through fermentation—a process similar to making wine, sourdough bread, cheese, yogurt, and even certain chocolates.
While the exact ingredients used by Zero remain undisclosed, their focus on cultures that naturally generate healthy fats, yeast, and microalgae ensures that their products are non-GMO.
