Rambutans are fascinating fruits that I first encountered in Chiang Mai, Thailand. Initially, I wasn't a fan, but they've since become one of my favorites. Recently, I decided to experiment with a unique recipe that incorporates these fruits into a spinach and ricotta stuffed chicken breast. The result was absolutely delicious! Feel free to add your personal touch, but I highly recommend trying this dish if you can get your hands on some rambutans.

Delicious rambutan and spinach stuffed chicken

Ingredients for the Salad

  • 2 cups of fresh rambutans, peeled and seeded
  • 1 cup of mixed salad greens (e.g., lettuce, arugula, spinach)
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of cucumber, thinly sliced
  • 1/4 cup of cherry tomatoes, halved
  • 1/4 cup of feta cheese, crumbled
  • 2 tablespoons of extra-virgin olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste

Instructions for the Salad

  1. In a large bowl, mix together the salad greens, sliced red onion, cucumber, and cherry tomatoes.
  2. Halve the peeled and seeded rambutans and add them to the salad.
  3. In a separate bowl, whisk the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Top with crumbled feta cheese.
  6. Serve immediately as a refreshing appetizer or side dish.

Spinach Stuffed Chicken Breasts

#### Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil

#### Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, cream cheese, grated Parmesan, minced garlic, salt, pepper, and paprika until well mixed.
  3. Carefully create a pocket in each chicken breast, ensuring you don’t cut all the way through.
  4. Fill each chicken breast with the spinach and cheese mixture, dividing it equally.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for 2–3 minutes on each side, or until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. After baking, let it rest for a few minutes before slicing and serving with your favorite sides.
