Rambutans are fascinating fruits that I first encountered in Chiang Mai, Thailand. Initially, I wasn't a fan, but they've since become one of my favorites. Recently, I decided to experiment with a unique recipe that incorporates these fruits into a spinach and ricotta stuffed chicken breast. The result was absolutely delicious! Feel free to add your personal touch, but I highly recommend trying this dish if you can get your hands on some rambutans.
Ingredients for the Salad
- 2 cups of fresh rambutans, peeled and seeded
- 1 cup of mixed salad greens (e.g., lettuce, arugula, spinach)
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of cucumber, thinly sliced
- 1/4 cup of cherry tomatoes, halved
- 1/4 cup of feta cheese, crumbled
- 2 tablespoons of extra-virgin olive oil
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
Instructions for the Salad
- In a large bowl, mix together the salad greens, sliced red onion, cucumber, and cherry tomatoes.
- Halve the peeled and seeded rambutans and add them to the salad.
- In a separate bowl, whisk the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
- Pour the dressing over the salad and gently toss to combine.
- Top with crumbled feta cheese.
- Serve immediately as a refreshing appetizer or side dish.
Spinach Stuffed Chicken Breasts
#### Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
#### Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, cream cheese, grated Parmesan, minced garlic, salt, pepper, and paprika until well mixed.
- Carefully create a pocket in each chicken breast, ensuring you don’t cut all the way through.
- Fill each chicken breast with the spinach and cheese mixture, dividing it equally.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for 2–3 minutes on each side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- After baking, let it rest for a few minutes before slicing and serving with your favorite sides.
